If you like coconut chances are you'll love this bread! I get requests for this one all the time, it is great with or without the glaze, just so you know.

Coconut Bread:
2 Cups Sugar
1 Cup Buttermilk
1 Cup Oil
4 Eggs
2 Teaspoons Coconut Extract

Mix and add:

3 Cups Flour
1/2 Teaspoon Soda
1/4 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Cup Coconut (Sweetened flake from bake goods isle or shredded from frozen section)
1 Cup Chopped Nuts (Optional)

Bake 1 hour 325 degrees. After removing from oven punch holes in loaf of bread while still in pan, allow to cool a little (2 minutes maybe) then pour glaze over and let set for 15-30 minutes in pan. After that time has passed may be good to remove from pan and let set that amount of time again before wrapping up, sugar from glaze will form slight crust makes easier to cut later and sticks to plastic wrap less if you let it sit like that to dry.

Glaze: Boil
1 Cup Sugar
1/2 Cup Water
2 Tablespoons Butter
1 Teaspoon Coconut Extract

After boiling, cool to just below soft ball stage (235 degrees) then the glaze is ready to pour on bread.

I think this makes about 2 large loaves or 4 mini loaves, if you like you can also make into muffins but I recommend you use cup liners. If you make muffins bake time should be around 40 min but watch for a nice golden color and do the toothpick test to make sure they are done. Toothpick test = a toothpick inserted in the center should come out dry if the muffins are done.) FYI I use a wooden or metal shish-ka-bob skewer to poke the holes for the glaze to run into.

This sounds wonderful....already got my list for the store...
I have one question...I am not a baking queen, so I have no clue what 10:082 teaspoon means?????????

Thanks for pointing that out, I missed that. It's fixed now but it's supposed to say 2 Tbs. Must have been a glitch when I copied it from my computer.

Since we are on the bread subject, how many have bread machines, how costly are they, and what brands would you recommend? I have been thinking of making the investment, but haven't quite been pushed enough, after reading these bread recipes, I'm about there....

Shannon, we used to have a bread machine - it made smaller loaves and not nearly enough for our family - but we loved it. NOTHING like fresh baking bread smell - mmmmmmmmmmmmmm-mmmm! Big Grin I like fresh baked anything smell - I did sell mine, but would get another one if I found one that made larger loaves - I am not a huge from scratch baker person - although I watch the cooking shows as often as time allows. I think ours was from Wal Mart. Nothing extraordinary - nor costly. Let me know what you get!

i have an OSTER bread machine. i can tell you i love it. i don't think i can live without it. lol
i think i use mine at least once a week. the recipe book has tons of recipes in it. and it has half batches and full batches. i use the dough setting the most. i make pizza dough all the time. it makes the best pizza dough. i also make bread dough in it. the only thing i don't like it to bake the dough in the machine. i would rather bake my dough in the oven. i always use it to make rolls for the holidays.

Courtney, I didn't realize you could make dough and not bake the bread! That is AWESOME! Now - I think I'll have to look into one like yours. I usually buy our pizza dough at Publix from their bakery - their sour dough bread dough works really well for pizza dough. BUT, if we can make our own - all the better and more educational opportunities for our boys! I like knowing that you have used it so often and for other baked goods. Thanks for sharing and recommending yours. Where did you buy it and how long ago? Just wondering if it'll be easy to get? I think of you all the time and wonder how you're feeling and how Brooke is doing with pottying - still going strong?

Thanks for the welcome.

To answer the bread machine question I don't have one. My dad does and uses it often with mixes and scratch ingredients. He bakes in it and occasionally makes things that he just uses it to mix the dough. But he's retired and has time on his hands and free counter space. Wink

My best kitchen gadget is my Kitchenaid mixer. I do make a lot from scratch sweet breads like the ones I've posted so far, cookies and I even have an attachment to use it to make ice cream. Aside from the essentials fridge, stove, microwave, coffee maker, thats the gadget I couldn't live without.
