I am in need of some new quick and easy recipes for the summer. We are always so busy during the summer and it's sometimes hard to cook a huge meal. I thought it might be fun to share some easy recipes with each other.

Chicken Broc. Casserole

1 bag of frozen broc (thawed)
1 can of soup to go Cream of Broc. soup
1 bag of Colby Jack cheese
cubed cooked chicken breast (as much as you like)
1 can of French's onion strings (the ones on green bean casseroles)

Layer in 9 x 13 pan the ingredients ...
broc., chicken, cheese, pour soup on top

bake at 350 for 45 minutes covered with foil
then take off the foil and put on onions
bake an additional 15 minutes uncovered and
serve! It's that easy and delicious!!

I know you're looking for quick meals, and I'll thumb through some of mine a little later, but I thought I'd share one of our favorite treats & I had the recipe handy. My son's busdriver, the one he's had all through the elementary years, just loves these ~ And these are surprisingly quick & easy to make. We don't make them every week, (it is for a treat, due to the sugar) but they don't last long when I do.


No Bake Cookies:

2 cups sugar
1/2 cup butter
1/2 cup milk
1/3 cup cocoa
2/3 cup peanut butter
3 cup quick cook oats
2 tsp. vanilla
wax paper for preparing & chilling cookies on.

Combine sugar, butter, milk, cocoa in pan over medium heat. Stir to boil. Remove and coool for 1 minute. Add peanut butter & stir, add oats & stir. Drop by spoonful onto wax paper and chill.


Just call moi Rachel or Gjee. Smiler (Or Priestess, or Thor, lol)

i have a paprika chicken recipe that my husband and daughter love. but forgive me i am an eyeballer and a pincher. lol. so i will try my best. it is very yummy.

1 package chicken cubed. put in pan and just barley cover with water. add a pinch or 2 of salt & pepper & parsley flakes. also add chicken boulion to taste. bring to a boil till chicken is cooked.
next add a 16 oz container of sour cream.
then add paprika to taste. i probably use 1/4 cup give or take.
bring back to a boil then thicken with a cup of corn starch. i usually use a lot of corn starch.
and serve over egg noodles.

if anyone has any questions please pm me i know it's a terrible way to write a recipe.

I'm going to have to try that one too greatfulcp. I love a good chicken recipe, (or a great casserole) and the ingredients sound so good there, paprika, sour cream, egg noodles. I bet that combination is really good.

I recently found this website, I was looking for inexpensive family meals, I have tried several and I liked everything but the burrito bake, my kids liked it on tortillas though

Courtney, we have not done "no bake cookies" and can't do peanut butter, but I wonder if any can be done without - I thought most have it??? Could you post a recipe if you have one that doesn't require peanut butter? Your chicken recipe sounds tasty.


Some of ours to contribute

We like to do boneless skinless chicken breast with a dab of butter in a pan to lightly brown both sides (a couple minutes) and while on the second side, add chicken stock (low sodium) to about halfway up the chicken, salt/pepper/Tony Chachere's Creaole Seasoning, whatever you enjoy, then cover and keep at medium heat - my stove dials show Lo, 2, 3, 4, 5, 6, High and I do this at 4. While this is cooking (will take about 20 minutes) we cook our rice - both done at the same time. Sometimes, I add some extra veggies to the rice. But, all in all, about 30 minutes is really all that's needed including time for prep. Little after dinner cleanup is necessary either.


My mother in law gave us a BUNCH of packages of Wild Alaskan Sockeye Salmon that I use half a package (whole for husband) in each child's veggie wrap (of some type and we use a large wrap even for the boys) with a bit of mustard, some mozzarella, and diced onions/peppers/spinach. Both boys gobble them up! AMAZING at 7 and 4 what ours eat. Eat better than me, that's for sure! Oh, sliced chicken or turkey works well like this too.


Alisha, I will look through the link you posted, too! I LOVE cooking shows and cooking out, so I'm always looking for new ideas.


Valery posted about a cooking and dining out "group" and Jamila mentioned joining it. I wonder how that group is and what Jamila thinks???? I have to look at Valery's link again, too. My husband laughs at me, he says I am sooo good at WATCHING the cooking, now if only I could cook as often as I like to watch! lol Wink I just do simple. Although, sometimes, I really go all out and gourmet the family to death, they're just begging for a boxed waffle! (Joke to Ann- not that there's anything wrong with them! - Believe me, we eat them plenty!)


My sister uses a crock pot that she sets up first thing in the am while tending breakfast that is done for dinner. She just throws everything in all at once and leaves it to do its thing. I am not so brave leaving something going in our home while out. She has for years and years, so she trusts it and swears by it.

ok michelle i thought about the no bake cookies with no peanutbutter. and what about using fluffer nutter (marshmellow fluff) instead of peanutbutter i would use the same amount. or the other thing maybe butterscotch. i'll go online and search around some more tomorrow and see what i can find.

Thank you Courtney! I would very much appreciate your searching for me. I have been having so many problems with our computer and many phone calls with literally HOURS on hold between 3 different divisions of one company and 2 different tech home visits with a third soon that I am about to hurl this thing! lol I have been bounced and with slow transition and what would take me less than about ten minutes to do has taken me nearly 3 hours! Even now, while online, I have had to reboot, restart, close down the broser to reopen about, oh, probably 30 times! Once up, I can be fast. I need to be or else I'm shut down.

With that digression, ladies, I am conceding to this technology beast for the evening since I have no more phone calls to make and hold with for "them" to keep checking my system and having me change things around. Smiler And, I won't be able to be online for a few days now, BUT, I WILL check in when I can again. Hopefully, "they" will fix this for me/us and soonnnnnnnnnnn........

I have one I found on the internet a few years back and passed it out to everyone I know. So some of you may have heard this one.

"To die for roast" in your crock-pot
1 roast (your choice of cut, I use chuck)
1 envelope brown gravy mix
1 envelope ranch dressing mix
1 envelope italian dressing mix

Put your roast in the crock pot. pour only about a 1/2 cup of water in a cup, pour all three powders into the water just to make a thick mix. pour over your roast. Cook on low for 8 hours. I makes it's own gravy from the meat juices! mmmmmm gravy...

i went online to see if i could find a no bake cookies recipe with no peanut butter. here are a few of the things they mentioned.
1/4 cup chocolate hazelnut spread.
soynut butter
sun butter
almond butter
soybutter spread.

i would use guitarjee's recipe with one of these sub's instead of peanut butter.
i hope one of these things can help.

Thank you for the roast recipe, I've been wanting one and that sounds great!

I want to share my favorite recipe for chicken ever, I've gotten more compliments from this one when I've served it, than probably any I ever have. I didn't make up the recipe, darn, but it sure is delicious, especially, if you are a pecan lover (like I am.) I also like this rice recipe to go with, but then sometimes if I'm in any hurry, I just throw in some minute rice to go with, and it still goes great.

BUTTERMILK-PECAN CHICKEN

1/3 cup butter or margarine
1 cup all-purpose flour
1cup pecans, ground
¼ cup sesame seed
1 tablespoon paprika
1 ½ teaspoon salt
1/8 teaspoon pepper
1 egg, slightly beaten
1 cup buttermilk
8 chicken breast halves, skinned and boned
¼ cup coarsely chopped pecans

Melt butter in a 13- by 9- x 2-inch baking dish; set aside.
Combine flour and next 5 ingredients. Combine egg and buttermilk.
Dip chicken in egg mixture, and dredge in flour mixture, coating well.
Place chicken in baking dish, turning once to coat with butter. Sprinkle
With chopped pecans. Bake chicken at 350 degrees for 30 mins. Or until
Done. Yields: 8 servings.

LEMON RICE

1 med. Onion, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
4 cups water
2 cups uncooked long-grain rice
4 chicken-flavored bouillon cubes
3 tablespoons lemon juice
½ cup chopped parsley

Saute onion and garlic in oil in a large saucepan until tender. Add water
And next three ingredients. Bring to a boil; cover, reduce heat and simmer
20 minutes or until rice is tender and liquid is absorbed. Stir in parsley.
Yield: 8 servings.

I used to make the no bake cookies when I was little, I loved them thanks for the recipe I forgot about doing that when I was little I'm going to show my kids the w/end how to make them.
We just tried the Country Chicken & Veggies in the Crockpot from recipezaar.com and the sauce was incredible

Ingredients
4 bone-in chicken breast
1 1/2 lbs potato, cut in chunks
1/2 lb baby carrot
1 cup chopped onion
2 (1 ounce) packages dry chicken gravy mix
1 1/2 cups water
1 teaspoon thyme
1 teaspoon minced garlic
1/4 teaspoon sage
1 teaspoon seasoning salt
1 cup sour cream
Directions
1Cut chicken breasts in half crosswise.
2In crockpot, put potatoes, carrots and onions.
3Top with the chicken.
4In small bowl, mix gravy mix with the next 5 ingredients until smooth.
5Pour over chicken.
6Cover and cook on low for 8 hours.
7Remove chicken and vegetables.
8Whisk sour cream into drippings.
9Serve over chicken.
I omitted the thyme not a big fan of that
I love crockpot meals and looking forward to cooking the "To die for roast"
