Okay ladies, I am getting excited about this coming Friday's blueberry picking trip! I wanted to plan ahead and decide now how many blueberries I might need before we go.

So thinking along those lines, I thought it could be a good idea to go ahead and share some blueberry recipes. If any one knows some good ones, that would be great, please post Big Grin!

This looks pretty easy, and how impressed people would be to make homemade blueberry jam for family and friends. I found this recipe so I haven't tried it, but I am thinking I might.


Wildflower Inn Blueberry Jam

This all-purpose jam is great on toasted English muffins or biscuits; it's also delicious heated and served as a pancake or waffle topping. The recipe works equally well with fresh or frozen berries. Because it's stored in the refrigerator, there's no need for canning.

Ingredients
5 cups fresh or frozen, thawed, wild blueberries
5 1/4 cups sugar
2/3 cup fresh orange juice (about 3 oranges)
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1 (6-ounce) package liquid fruit pectin (such as certo)


Preparation
Place the blueberries in a large saucepan, and crush with a potato masher. Add sugar, juices, and salt; stir well to combine. Let blueberry mixture stand for 30 minutes.
Bring mixture to a boil over medium heat; cook 1 minute, stirring constantly. Remove from heat, and add pectin, stirring until well blended. Pour jam into jars or airtight containers. Cool completely; cover and refrigerate for up to 4 weeks.

Yield
7 cups (serving size: 2 tablespoons)

they sell pectin in tha baking isle in all grocery stores. it makes the jam or jelly i want to say become hard but it's like a jello constisity. i hope you know what i mean. i use it to make strawberry jelly. you just have to make sure you stir a lot!!! while your making the jam or jelly.

saturday i made blueberry waffles and sunday i made blueberry pancakes. other than that we have been eating them like crazy!!!!

We have been just eating them as a snack and incorporating them into our meals. The kids had pizza with a side of blueberries for lunch.

I told hubby that we need to decide what we want to do with them soon or freeze them for smoothies later.

They are so yummy. I have been finding myself using them as a meal replacement. I have lost 3 or 4 pounds since we picked. Ya-hoo!

We have snacked on them some. They are good! And we are making a quick and easy jelly with them now. lol We'll see what happens with that. I would like to get some more. mmm

gritrus how much do you need for your jelly reciept? i was thinking i'd like to make jelly but i don't want a ton of blueberry jelly.

I was not able to go Friday But I went Sat with My friend we picked 5 pounds and I made Blueberry Pie & Cobbler so far I think I might make a Syrup for pancakes with the left over Van seems to enjoy eating them also. It was a very nice place to go had fun sorry I was not able to go with the rest of you maybe next time.
